Since I need to bring a dish for a Cinco de Mayo potluck that my family's attending, I decided to try something south-of-the-border. This week I tested this Southwest Mac & Cheese on my husband and kids and got a big thumbs up. It was really simple to put together and provides enough for a large family (plus leftovers).  Preheat oven to 400 degrees Step one: Prepare 2 boxes of Kraft Mac & Cheese according to the package. Step two: In a separate skillet, brown 1 pound lean ground beef. Drain meat of excess grease then add a jar of your favorite store bought or homemade salsa. Step three: Spread 1/3 of the finished mac & cheese into a greased 9x9 casserole dish. Step four: Spread 1/2 of the ground beef-salsa mixture on top
