Even though greens are a VERY Southern dish, I never had them growing up. Mostly because my family never cooked them. As an adult, I have grown to love greens of every sort and even learned how to cook them. Here's a recipe I made last week that I loved so much that I had it leftover for 3 days straight. Southern Greens Ingredients 5 slices of bacon, chopped 1 onion diced 2-3 cloves garlic, sliced thin 3 pounds of mixed greens of your choice (kale, chard, collard, turnip, mustard) - cleaned and chopped into 2 inch pieces, hard stems removed 1/2 tsp cayenne pepper Salt and Pepper for tasting 3 Tbsp red wine vinegar 1/2 teaspoon sugar Tabasco to taste Directions -In a large heavy bottom pot (like cast iron or Magnalite), add the bacon to the pan over medium heat until almost crisp. Add the onions and cook for 3 minutes. Add the garlic and cook for another minute. -Add greens to your pot with the cayenne pepper and a large pinch of salt and pepper. Cover and cook
