Cherry Blueberry Crumble-Top Pie Ingredients 1 pound cherries (about 4 cups), pitted 2 cups blueberries 1 tablespoon lemon juice 1/2 cup plus 1/3 cup sugar, divided 3 tablespoons cornstarch 1/2 cup all-purpose flour 1/4 cup quick-cooking oats 1 1/4 teaspoons ground cinnamon 1/4 teaspoon fine sea salt 4 tablespoons cold unsalted butter, cut into chunks 3 tablespoons buttermilk or regular milk 1 frozen 9-inch pie shell Directions Preheat oven to 375°F. In a large bowl, combine cherries, blueberries, lemon juice and 1/2 cup of the sugar and toss to combine. Sprinkle with the cornstarch and toss again. In a medium bowl, whisk together flour, oats, cinnamon, sugar and salt. Add butter and use a pastry cutter or your fingertips to work it into the flour until no pieces larger than peas remain. The main reason I like to make my own fried rice at home, besides the cost factor, is that I can control what goes into it. We only eat brown rice in our home and I don't know of any restaurant that uses anything but white rice. Plus I can use less oil and to be honest it tastes just as good without it. Chicken Fried Rice (makes 4 side servings) Ingredients 1 boneless, skinless chicken breasts, cut into thin strips 2 Tbsp Olive Oil or Canola Oil, divided 1/2 yellow or white onion, diced finely 2 carrots, peeled and diced finely 3 cups cooked brown or white rice 1/2 Tbsp butter 2 eggs, slightly beaten 1/4 tsp sesame oil 3 Tbsp low sodium soy sauce Salt and pepper to taste Directions -Heat 1 Tbsp olive or canola oil in a wok or large nonstick skillet on high. -Add chicken and cook until brown but not cooked through stirring frequently.
