I know what you're thinking, "Gumbo without meat as the main ingredient?", but I'm on the third day eating this leftover and I can't get enough of the stuff! The original recipe from Food Network magazine is totally vegetarian but I decided it needed a little bacon (and just a little) to enhance it. If you love black eyed peas, you're going to LOVE this!!
