How do you "liven up" plain ole green beans? Turn them into Mardi Gras Beans that are pretty enough to serve at a dinner party or for a weekday meal. Mardi Gras Green Beans Ingredients 1.5-2 pounds fresh green snap beans (with ends snapped or cut off) 1/2 medium yellow or white onion sliced thinly 1/2 medium red onion sliced thinly 1.5lbs mixed purple and yellow baby potatoes quartered 1 Tbsp olive oil About 1 cup of liquid - water or vegetable/chicken broth (I prefer broth) Salt & Pepper  Cajun seasoning Directions -Add 1/2 Tbsp to cast iron or heavy bottom pan on medium heat. Add onions and season with pinch of salt and pepper. Cook for about 5-7 minutes until soft. -Add the remaining 1/2 Tbsp of olive oil to the pan and add the green beans. Cook until slightly browned about 5-7 minutes. -Add in the quartered potatoes, about 1/4 cup of the broth, season with cajun seasoning and stir. Last night my girls and I were invited to the Louisiana Children's Museum , in downtown New Orleans, for a sneak peak of the Talk & Play Center that will open to the public this Saturday, June 2nd. Now that the kids are out of school and snacking is in full swing in my house, I'll be sharing some of my favorite easy snack recipes. This particular recipe has been around awhile and it's always a hit in my house....and it's a way to get extra veggies in the kids' diet. Crescent Roll Veggie Pizza Ingredients 2 cans (8oz each) Crescent Dinner Rolls 1 (8oz) package reduced fat cream cheese, softened 1/2 cup light sour cream 1 Tbsp Hidden Valley Salad Dressing and Seasoning Mix, from packet of powder mix (reserve the rest for another recipe) Approximately 2 cups of chopped mixed veggies (broccoli, cauliflower, carrots, tomatoes, etc) 1 cup reduced fat sharp cheddar cheese Directions 1. Preheat the oven to 375°F 2. Prepare a 15X10 inch baking sheet with non-stick spray.
