Today I'm sharing one of my own recipes. I'm always looking for ways to make my favorite childhood dishes lighter. In this recipe I replaced the ground beef with 93% ground turkey and the long grain white rice with brown rice. I also added chopped Kale which adds lots of extra Vitamins A and C without changing the taste. 

Light Stuffed Bell Peppers - 9 Weight Watchers points

Ingredients

4 medium sized bell peppers ( I like to use different colors but green are fine as well)
1 tsp olive oil
1 medium onion, minced
12 oz 93% lean ground turkey
2 tbsp minced garlic, divided
1 (14.5 oz) can diced tomatoes, drained
3 cups chopped fresh kale
1 1/2 cups cooked cooked rice
Salt and pepper to taste
4 tsp seasoned bread crumbs (optional)
1 (28oz) can crushed tomatoes
1 tbsp minced fresh oregano

1. Preheat the oven to 350 degrees

Today's recipe is courtesy of Skinny Ms. This is for all of us who love carbs but are watching our weight. At only 6 Weight Watchers points, it's a winner!

Turkey Stroganoff

Ingredients

1 pound ground lean turkey
1 mild onion, diced
4 ounces mushrooms, sliced
1 cup chicken broth, fat free, low sodium
3 tablespoons tomato paste
1 tablespoon balsamic vinegar
1/2 teaspoon black pepper
Salt to taste
1 cup Greek yogurt, fat free, plain
2 tablespoons cornstarch

Directions

In a large skillet add ground turkey and cook until it loses its pink color, drain off any fat and add to the slow cooker. Add extra virgin olive oil to the same skillet and sauté mushrooms and onions over medium-low heat until tender, about 6 minutes.

Add the remaining ingredients to the slow cooker, except yogurt and cornstarch. Cover and cook on low 7-8 hours. Combine Greek yogurt with cornstarch, add to stroganoff and continue cooking 30 minutes. Serve over whole wheat egg noodles or brow…

I just wanted to give you guys a heads up on this deal since I just ordered mine.

I have been using Olay Professional Pro X Clear Acne Protocol, which includes Olay Professional Pro X Clear UV Moisturizer SPF 15 ever since P&G sent the products to me for a review and I'm hooked - I mean like a customer for life kind of hooked! I've never used anything for my skin that makes it look and feel the way it does right now.

That said....these products are not cheap but I'm determined to continue using them - so I'm on the hunt for a great deal and I found this today. Amazon has the Olay Professional Pro X Clear UV Moisturizer SPF 15 for $8.79 (regularly $33) + $2.99 shipping. I've been looking for a couple of weeks now and this is the best price just keep in mind that prices on Amazon can change at any moment so get it early if you want it.
