What's With Dinner? "Roasted Rosemary Baby Potatoes"
Here's a recipe to help you put your B1G1 Free Klondike Potato coupon to good use. I make this pretty often as a substitute for french fries or even baked potatoes. Goes well with fish and steak.
Roasted Rosemary Baby Potatoes
Ingredients
1 1/2 lbs of baby potatoes - I like the medley potatoes
2 tbsp Extra Virgin Olive Oil
1 tsp sea salt (or table salt)
2 tbsp minced fresh rosemary or 1 tbsp dried rosemary
2-3 cloves minced garlic or 1 tsp garlic paste
Directions
-Preheat oven to 400 degrees
-Prepare a baking sheet with parchment paper or foil paper and coat with non-stick spray (only for the foil)
-Half or quarter the potatoes, depending on size then toss all ingredients in a mixing bowl
-Pour potatoes onto the prepared baking sheet in a single layer
-Roast for 45 min to 1 hour until done - turning potatoes once in the middle of cooking.
